2008 Seam Pinot Grigio
Now I am not typically a fan of this grape. Too often there’s no there there..it tastes like ‘white wine’ and I find nothing to grab on to. This wine tastes closer to white burgundy to me than Pinot Grigio. We aged it in neutral oak barrels forever! It never changed! I finally decided to bottle it because I knew that wouldn’t last indefinitely. Experiments like this are super fun for me, to see where the wine might go, and this one went to my happy place. Tons of minerality and a little citrus, this is a great seafood or roast chicken wine. The wine was 100% whole cluster fermented with native yeasts. After all my play time was over we only had 60 cases to bottle.
